Right On! Veggie Tacos...De-lish!


I was very motivated to cook this last week. This motivation came way before the plumbing crisis....but I am back on track.

I knew Heather was coming - yes the same Heather that I gave about 50 pounds of wheat to. I decided to make veggie tacos. I was craving some Mexican grub and so far besides taco trucks - I have not found that OMG! Mexican food expirience in LA. So I made my own. Sean usually kicks butt on the yummiest Mexican food but I can burn (Mom, thats a good thing) some veggie tacos.

I planned on making everything Heather friendly. The wheat part was easy - corn tortilas and no dairy - ya ya I made some yogurt chipotle crema but it was on the side.

Sweet Potato Soy Chorizo Filling
Guacamole
Black Bean and Corn Salsa
Yogurt Chipotle Crema
Baked Corn Tortilla Shells
Shredded Cabbage and Romaine
Pickled Onions







Everything was ready when she came and we were able to have a nice guilt free lunch! I so enjoyed cooking for someone. Very anxious for Sean's return - maybe I will make him some veggie tacos!

Also I gave some to the neighbors. They loved them. One neighbor told me - "I didn't even miss the meat!" Score!!

Everything is so simple and quick. It can all be made ahead of time. Add some queso fesco and your favorite salsa and there you have s simple perfect lunch!

Here's a few recipes from our Veggie Taco Lunch.

Sweet Potato and Soy Chorizo Filling
The sweet potatoes add so much flavor and texture. Very "meaty".

Half a package of Soy Chorizo - Soyrizo is one brand that I can always find. Of course you could use package real meat chorizo. But this stuff is good! You won't miss a thing.
1/2 cup of chopped onion
1/2 jalapeno, diced (add more or less depending if you want it spicy)
1 medium sweet potato, peeled and diced. Simmer in a little water til soft.

Brown soyrizo in a little olive oil. Add onions, jalapenos and sweet potatoes. Continue to cook until the potatoes and onions caramelize. Just a few minutes

That's it. So simple. I don't add salt and pepper but of course taste it for seasonings. This filling is great on tacos or even with a filling for an omelet or scrambled eggs. Its also easy to make more just add more of the ingredients that you like!

Black Bean and Corn Salsa
Perfect with chips or on salads and of course tacos!


1 Can of Organic black beans, drained and rinsed
2 ears of fresh corn, sliced off the cob
1/4 of red onion, diced
1/2 jalapeno, more if you would like
1/2 red pepper, diced
1/2 green pepper, diced
juice of one or two limes
2 TBS cilantro
salt and pepper
Hey and if you want chop up some tomato and add in, go ahead. But I can't...still, I am sure it would be tasty
Mix all the ingredients in a bowl. Season with salt and pepper to taste.

Again- that's it. So simple. I do want to impress upon you to make this your own...add more onion, less bell pepper, more beans, less corn...ooo or maybe another type of bean.....you are the captain of your black bean salsa ship - go crazy!



Yogurt Chipotle Crema
I could put this crema on anything: salads, sandwiches and more. Chipotles rock! Spicy and smoky so good!
1 cup of plain yogurt - I always have Greek yogurt on hand but use what you like. You could even use sour cream.
2 TBS Mayo - soy, regular or none at all - it's still tasty without. Just kinda mellows out the yogurt and gives it a nice texture.
1 TBS lime or lemon juice
1 Chipotle pepper, chopped. One pepper from a can of Chipotles in Adobo. Hey if you have made your own, please tell me about it...it's on my I wish to cook list.
salt and pepper

Mix all the ingredients in a bowl. Season with salt and pepper to taste.

Easy Guacamole

2 large avocados 0r 3 or 4 small
1/2 cup onion diced
2 roma tomatoes, chopped, optional
2 TBS cilantro
juice of two limes
Salt to taste
Mash avocado with fork. Add remaining ingredients. Stir. Add salt to taste. I always leave one or two pits in my guac. Old wives tale maybe, but supposed to keep it from turning brown. I also cover with plastic wrap pressed right on top of guacamole. Enjoy!


Some quick and easy veggie taco fillings.


Kale - Add chopped fresh kale in place of the sweet potatoes above. Saute with the Soyrizo! Or saute the kale with garlic, onion and chilies. Mmm good!

Potato - Make you favorite hash browns and season with onions, garlic, cumin and chili powder.

Pepper and Onions - Make like fajitas. Season with garlic and chilies.

Fake meat Crumbles - I like to fry up with a little onion and jalapeno and mix in my favorite refried beans. Season with garlic, chili powder and cumin.

Mushrooms - Potabella would make an excellent, meaty filling. You can grill outdoors or slice and fry up in pan with garlic, onions, chilies, cumin and chili powder.

Other Veggies - Dice carrots, zucchini, eggplant, mushrooms onions, chilies, tomatoes and garlic. Add corn. Saute up with cumin, chili powder, salt and pepper! Kinda like Mexican succotash...perfect filling for burritos or tacos.

Crumbled Tofu, Cracked Wheat...the possibilities are endless.

I really wanna tell ya'll - make what you like. Experiment! Be creative!

Now I don't eat tomato or eggplant ...allergies ..But of course, they would work added to any veggie filling! I will post some yummy salsas soon..tomatillo, roasted tomato and more.

So veggie tacos. You wont miss the meat. They are very healthy too.... more room and less guilt when you go for for Mexican Chocolate Cake or my favorite - FLAN!

I am going to make these tacos this weekend! Pretty soon it'll be hot and dry in Denver, and this looks like a great summer recipe (with a margarita of course!)
