Recipe #8 BBA Challenge
I will keep it short and sweet or should I say caramel-ly and sticky or maybe yummy and de-lish, scrumptious and orgasmic, soft and cinnamon-y or just all of the above!
It's recipe number 8 Bread Baker’s Apprentice Challenge. Cinnamon Buns. I chose to do sticky buns. I decided to add orange zest to the dough and to the glaze. I also chose to add dried cherries and pecans.
The results were amazing!! So good. The recipe was easy and came together quickly. I was able to make the dough and the glaze and pop in the fridge overnight. When I woke the next morning I let the dough proof on the stove while I finished an errand and cleaned up around the house.

The dough proofed nicely. I rolled it out and sprinkled the cinnamon sugar on top. Rolled up jelly roll style and cut into 12 portions. I spread the caramel glaze, a mixture of butter, brown and white sugar, corn syrup and added orange zest in the bottom of a 13 x 9 pan. I topped with dried tart cherries and pecans. Then placed the cut rounds of dough top.
I proofed the sticky buns for over two hours. I didn't mean to do it that long. But I had put my head down for a little cat nap and time flew by. I am still getting caught up on rest after a long work week catering. But - I woke up to perfectly proofed buns. I heated the oven and in they went.

The apartment smelled great. I was excited for the results. I love cinnamon, caramel, pecans and cherries. They sticky buns did not disappoint. They were AMAZING and DANGEROUS! I couldn't stop eating them. I even burned my tongue a tad - I was excited! They really are that good.

I shared with neighbors and friends. I was supposed to head down with the lot of these to San Diego but my cat nap ruined that idea. But I will make it up to them soon! I headed over to our cousins place with five sticky gooey buns. Lil' R gigled when I said I brought sticky buns. They loved them. The littlest one keep asking for more of the caramel parts. (PS I had to drive these buns over there because earlier in the week I had given my cousins husband some cake to take home- three very large pieces of Peaches n Cream Cake but I learned it never made it and he ate all three pieces...so no sticky buns for him...hopefully my cousin hid the plate!)
Again I cannot say enough about The Bread Baker’s Apprentice: Mastering the Art of Extraordinary Bread by Peter Reinhart. It is chock full of info and very easy to understand. The cinnamon/sticky buns are great! Get the book just for this recipe alone. Oh and maybe the bagels and the ciabatta. They are winners. Oh and the Anadama was de-lish! I think you get the point!

Jen those are just beautiful sticky buns. I have made them 3 times now and am constantly thinking about them.

All I had to do was read "Orange Dried Cherry Pecan Sticky Buns" and my mouth is already watering. Oh man, I love dried cherries. I have to have to try these. They look dee-licious!
I completely agree with misterrios, I just had to go on reading. And the pics ... pecans and sticky caramel and cherries ... I obviously have to do these again. Don't know if I can find dried cherries though, I will have to stock up when I go to the US again!
