A Dear John Letter to The Bagel (Recipe #12 BBA Challenge) English Muffins

Dear Bagel,

I know its crappy to tell you this in a letter but I have found a new love. Its not important what that new love is but just know that it's me not you. You have been the best bagel ever! But I have moved on to a new favorite.

I know. I know. This might come as a shock to you especially because I was so hot for you when we first met. You are an amazing bagel. But for now I have to explore these new feelings I have.

I know lots of folks that you are still a favorite with.

Remember it's me, not you. I hope we can still be friends.

MMMMMMooooovvveeee over Bagels I have found a new favorite - The English Muffin.

I was so hot for the bagel when I first made them. I was kinda losing a little fizzle about the recipes in BBA (Don't get me wrong - the book is fab i just needed some excitement.) I had made enough fruit and nut breads and the cornbread kinda moved me...but I am back full of that excitement I felt when I made bagels.

The English muffins were fun fast and easy. Maybe what my summer needed. I am wet for English muffins. Yes, Sean you need to come home soon....my life has turned into rendezvous with farmers markets and a love affair with yeast and flour.

This is recipe #12 in the BBA challenge - English Muffins. Sean was back just in time, if only for a short while, to see my madness. The dough in an enriched dough. I chose to use buttermilk instead of regular milk. The fun part of making these is the are baked in a skillet then popped in the oven to make sure baked thru. I also couldn't wait for them to cool so I could "fork-split"them and enjoy!

I am glad I made only six. I tried to ration them and not eat them too quickly. We enjoyed toasted with butter and jam. We also made our own version of the McMuffin instead using roasted turkey, sharp cheddar and some pesto mayo. I enjoyed the last one with almond butter and agave. They were delicious and I cant wait to make another batch soon!! Mmmm English muffin pizzas....those were the days!!

Oh Jen, you crack me up. Great post. I know exactly what you mean by the excitement level you felt when you baked the bagels. That was a high!!
Loved the link to the dear john letter. Fortunately for me I'm happily married, but that would have been fun to send many years ago. Your english muffins look great. Mine were ok, but definately not a contender to replace the bagel.

I agree with Cindy. The english muffins were good, but the bagels were divine. I'm staying true to them.

Your English muffins look great. I just ate the last one that I had in my frozen assets before coming to Boston. Love the fact they will thaw out in 10 minutes so you can fork split them.
