A Pictorial






My poem this week...a labor of love. I have been concentrating on so many other things that my Pictorial and a Poem suffered. But it is important that I finish one for this week. So here it goes.

A Poem

I love veggies
I love fruit
Eat em up
Eat em up
Yum

Yes thats my poem this week. Kinda borrowed in some ways..but enjoyable none the less.

A Recipe
Okra Fries
1# Okra About 16 Pods, Cut into fourths, Lengthwise
1 Egg, Beaten
1/4 Cup Buttermilk
1 cup cornmeal
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp chili powder
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 cup vegetable oil

In a small bowl, soak okra in egg and buttermilk for 5 to 10 minutes.
In a medium bowl, combine cornmeal and spices.
Heat oil in a large skillet over medium-high heat.
Dredge okra in the cornmeal mixture, coating evenly.
Carefully place okra in hot oil.
Fry until golden.
Drain on paper towels.
Serve with your favorite dipping sauce.

Jalapeno Basil Ranch
1 Whole Jalapeno - you can remove the seeds for less spice
5 Large basil leaves
Some Cilantro, if handy
1 Garlic Clove
1/2 Cup mayo
1/2 Cup Sour Cream
A little bit if honey - maybe 1 teaspoon
Juice of Half a lime
1 TBS Rice Wine Vinegar
Salt and Pepper to taste

Throw everything in the blender and whiz it up!
Taste for Salt and Pepper. Adjust the sweetness or sourness by adding more honey or lime.
