A Recipe
Sour Cream Chocolate Cupcakes with Cream Cheese Peanut Butter Frosting
This recipe is floating around everywhere, cookbooks, foodblogs. It is a standard for me. Though the vegan chocolate cake recipe I have here would work too. http://www.peteeatemall.com/2009/04/need-cake-need-chocolate-done.html
Smitten Kitchen has some gorgeous pics of a cake she made - http://smittenkitchen.com/2008/08/chocolate-peanut-butter-cake/

2 cups all-purpose flour
2 1/2 cups sugar
3/4 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
1 cup vegetable oil
1 cup sour cream
1 1/2 cups water or leftover coffee
2 tablespoons white vinegar
1 teaspoon vanilla extract
2 eggs

Sift flour, sugar, cocoa powder, soda and salt together. Mix in oil and sour cream. Then add water, vinegar, vanilla. Stir till combined. Add eggs and mix thoroughly.

Pour into paper lined cupcake tins.

Bake for 20 minutes or until just firm to the touch. Do not over bake. The cake is very soft so I never have luck with the toothpick test.
Let cool completely. Top with your favorite frosting or better yet Peanut Butter Cream Cheese Frosting.
Peanut Butter Cream Cheese Frosting
4 oz. package cream cheese
1 stick of butter
1/4 cup heavy cream
1/2 cup peanut butter - Jif or Skippy kind not natural
5 Cups Powder Sugar
In bowl of mixer, add cream cheese, butter and peanut butter. Mix until smooth. Add powder sugar 1 cup at a time. After all powder sugar is in bowl add heavy cream and mix a medium high til light and fluffy about 5 minutes. Top cupcakes! Enjoy!
