Actually Chocolate Cream Cheese and Fresh Raspberries.

The other night I was craving cake. Chocolate cake. I thought of making my usual stand by - a delicious simple vegan chocolate cake. But then I realized I had fresh raspberries and some sour cream that needed a home. Mmmm! Chocolate Raspberry Cake. Just when I thought it couldn't get any better, I decided to add a cream cheese, fresh raspberry tunnel - A tunnel of love.
The recipe came together easily. I love cake recipes with whole eggs. This recipe also used cocoa powder which made it come together quickly and melted chocolate for the center. Now, I don't mind melting chocolate because I am able to lick the bowl! I assembled all the ingredients and prepped the cream cheese center. I prepared my bundt cake form and knew it was a little smaller than a 10 cup one so, I also prepared a few ramekins to make some baby cakes.
The end result was delicious. It took quite a long time in the oven. Well, it was just an hour. Maybe it just felt like a long time, because I couldn't wait for a piece.
It puffed up beautifully and I was anxious to unmold. In my anxiousness, I did try to unmold too early. It's chocolate cake, you do understand, don't you? So when I placed the pedestal on top of my mold and turned it over....I kinda dropped the cake. Yes, I dropped the cake, not an "on the floor" kinda drop! Rather, the cake slid off the pedestal and I was able to save the cake and place back in the mold and try again. With the creamy center, the cake was a bit fragile. Next time, I will remember to let it cool completely!! Thank goodness, it wasn't a total loss.
The smell was heavenly. The creamy raspberry tunnel was divine. I didn't frost the cake. It was rich enough, as is. Even though it was a bit ugly, and my tunnel, a bit smooshed, all the flavors were there and we snacked on the cake for a few days. It is a definite winner. I was able to get a few good pictures. No pics of the fall/boggle/almost disaster - slash - learn more patience.

Chocolate Raspberry Cake with Chocolate Cream Cheese Center

Cake
1 cup butter, melted
2 eggs
2 cups sugar
1 cup sour cream
1 cup milk
1 tsp vanilla
3 cups flour
3/4 cup cocoa
2 tsp baking powder
1/4 tsp salt

Filling
1 package cream cheese
1 cup chocolate chips, melted and cooled
1 1/2 cups fresh raspberries
Preheat oven to 350 degrees.
Grease and flour a large bundt or tube pan. I used a small bundt pan and also made four baby cakes.
For filling, mix cream cheese and melted chocolate chips together and set aside.
For cake, sift together the flour, cocoa, baking powder and salt.
Beat eggs and sugar until the mixture is thick and pale yellow. Beat in melted butter. Then, mix in sour cream and milk. Add in the flour mixture and mix well.

Spread half the batter into the prepared pan. Drop spoonfuls of the cream cheese filling evenly over the batter. Sprinkle raspberries over the top. Cover with remaining batter.
Bake at 350 degrees for about 1 hour. Make sure not to over bake. The toothpick test doesn't work so great for this cake because of the filling. But remember to let this cake cool completely before unmolding.
