Sweet Potato Pecan Pie

Tuesday's Quickie.
The Best of Both!

I love sweet potato anything, especially pie! And I love pecan pie! (Well actually I love cold pecan pie with vanilla ice cream). For years now I have been making sweet potato pecan pie. This isn't a new invention. It's just a delicious one. I make a few different versions, some with more gooey, yummy filling and some with a more praline topping. I have finally found one in between that keeps my customers happy. It's a great seller every year.

Sweet Potato Pecan Pie
Filling
2 medium sweet potatoes
1/4 cup butter, melted
1 (14 ounce) can sweetened condensed milk
1/4 tsp cinnamon
1 tsp vanilla
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg

Pecan Topping
1 egg + 1 egg yolk
3 TBS dark corn syrup
3 TBS brown sugar, packed
2 TBS butter, melted
1 tsp vanilla
1 cup chopped pecans

1 9 inch pie crust.

Roast sweet potatoes whole in 400 degree oven.
Note: I place sweet potatoes on foil sheet in oven. Bake until soft. I try to put potatoes in when baking something else as to not waste the heated oven.


Peel cooled sweet potatoes and place in large bowl. Add butter, condensed milk, egg, cinnamon, nutmeg, salt and vanilla. Blend until smooth. Pour into the unbaked crust.

Note: This always makes extra filling depending on the size of the potatoes. When you fill pie crust be sure to leave room for the pecan topping. I like to crimp my pie edges a little higher to make a little extra room for topping. Also when I have extra filling, I generously spray souffle cups and fill with leftover filling. Bake until set. You can brulee a little sugar on top or just make the cooks snack!




Bake at 350 degrees for 20 minutes.

Remove the pie from the oven.

While the pie is baking, prepare the topping. Mix together 1 egg, egg yolk, corn syrup, brown sugar, melted butter, maple flavoring, and pecans. Mix thoroughly. Pour over sweet potato filled pie. Place pie on a rimmed baking sheet in case of gooey overflow!
Bake for another 25 minutes until set
Let cool and enjoy!
